The first sumptuous rainbow cake has vibrant colored cake layered with creamy white frosting. It's made by the very talented Kaitlin (aka Whisk Kid) who walks you through the recipe here. She calls it a "Super Epic Rainbow Cake" and we'd have to agree!
A more loosey-goosey, but equally stunning cake is a swirled rainbow cake baked by Aleta of Omnomicon. You can read about how she made it here. She suggests you make any cake recipe you like (white or yellow) and use her instructions and photos for how to create the rainbow effect.
Finally, an electric pink strawberry cake we spotted on the Kitchn. You can find the recipe (which intriguingly incorporates strawberry Jell-o) at Fine Living. It is part of Sweets: Soul Food Desserts and Memories by Patty Pinner.

I was gonna say - number three just looks like a good old jello cake. Made allllll the time back in the day by my grandma and various other middle aged to just plain old relatives. My mom made one last year and we all got sentimental. Very common midwestern dish.

I made rainbow cupcakes for my son's school birthday party, all the kids LOVED them. They looked more like cake #2 though. I would really love to make a layered cake like cake #1, so beautiful!

I made the second rainbow cake for my son's second birthday and it was such a hit my daughter wanted it for her Groovy Girl 6th birthday. For the first one I used the McCormick liquid food coloring drops and it produced oohs and ahhs. The second one I sprung and purchased the Wilton food coloring pastes and talk about color pop! Again kids and adults loved it. I just the basic white cake recipe from the Cake Mix Doctor. It worked well and was yummy. I also did 7-minute frosting and left it white to contrast with all the colors.
