The bedding makes such a dramatic statement on its own that I don't think I'd add much else in the way of nature-themed items. You'd lose what makes the bedding special and you'd wind up with too many themed items that would have to be replaced when the baby inevitably grows up and decides s/he would like to have a "big kid" room. The colors of the bedding are nice, gender-neutral colors, so play off of them for sure, but don't go overboard trying to match the nature theme.
As for furniture and lighting and such, pick pieces you'd like in the rest of your home. When it comes to wall art, don't try too hard to stick to the theme of the nursery. Just pick bold, interesting pieces that will give your child something fun to look at.
And your baby will only have a mobile for a short time -- you have to take them down as soon as baby can reach for them, which happens very soon! -- so choose whatever grabs you. Better still, choose one that grabs you at a garage sale or on Craigslist -- there are plenty more important things to blow the big bucks on!

I don't know what your budget is, but if it is on the smaller side and you would consider shopping at Wal-Mart, they have some nice traditional furniture in espresso. The Baby Mod line is made of solid wood (as opposed to pressboard), although it is made in China. Here is the link to a convertible crib:

for lighting, you probably want to avoid floor lamps, as they can be run into/pulled over by toddlers. You may already know this, but it didn't occur to me.

Finnian's montessori room did a great take on the woodland theme. Plus, the pieces were classic and not at all modern.
I would say a bookshelf/toyshelf, solid wood, stained espresso, some great art (where you can also find great woodland stuffies and probably a cool mobile) from Etsy, some more classic frames (I find the more traditional ones at Target, personally), a nice old fashioned rocker, a sheepskin (or animal-friendly substitute) and maybe a few investments for the future--my kids love their child sized rocker (that was a family heirloom) and have loved sitting in it since they were each about six or seven months old. I think some nice baskets (picnic baskets maybe?) for diaper storage now and toy storage later would be fantastic.
I also think investing in a few quality toys as decoration for the nursery now (think bark blocks) is a good idea considering they have the eventual use as playthings instead of just something else to dust.
I'm not a fan of dressers, personally, since I like having my children's clothing hanging up, but a nice dresser with a changing pad on top would actually grow with your child.
this light from Urban Outfitters would look nice with your bedding--I like pendant lamps because it provides additional light but can be safely installed out of crawling/toddling reach, if you KWIM.

I think themes are fun. And they don't outgrow them all that fast if they're not trendy cartoon characters.

(I've found that hanging mobiles above the changing table is better than above the crib. You need the distraction more there, and since the baby is never left alone on the changing table, you don't have the stand-up-and-pull-mobile-down problem.)
